Shanna's Honey Banana Bread

1 cup Tommy B’s Honey (from my farm)

½ cup Softened Butter

2 Large Fresh Eggs

3 Mashed Bananas, About  1 Cup

¼ cup Sour Cream

1 tsp Baking Soda

¼ tsp Salt

2 cups Flour

1Tbsp Tommy B’s Honey

¼ cup Chopped Pecans

In a large mixing bowl, using an electric mixer, beat together honey, butter and eggs.

In another bowl, mash bananas using a potato masher.  Add sour cream to mashed bananas.  Add this mixture to the honey and eggs.  Mix well; set aside.

In a large mixing bowl, using a wire whisk, combine baking soda, salt, and flour. 

Add the liquid and mix well. 

Pour into a greased 9 x 5-inch loaf pan.  Top with 1 Tbsp honey and ¼ cup chopped pecans. Bake in the oven at 350 F for 50 minutes.  Insert a toothpick and ensure it comes out clean.  Let stand for 10 minutes before removing from pan to cool on rack.
